Winemaking

Traditional winemaking, from 2 to 4 weeks duration, starts by a period of extraction based on offloading in the beginning of the fermentation. The second half of the fermentation is composed by pumping. Temperatures are between 24°C and 26°C in the beginning, the objective is to get them up to 26°C to 29°C in the end.
