Winemaking

Mechanical harvest during the night or in the beginning of the morning, to avoid the oxidation and to obtain the freshest juices as possible. The wine is made by two different ways : by a direct pressing and then a settling ; or by keeping the grapes in the wine press at low temperatures and then processes the pressing and racking. Comes afterward the fermentation; wort are racked and put in fermentation at controlled temperatures between 16-18°C to optimize the exotic aromas. In the end of the fermentation, wines are put on lees for 1 to 2 months.
