Following a pneumatic pressing, a short pre-fermentation
maceration takes place. The vinification is then carried out
in stainless steel vats at a medium temperature. Ageing on
the lees, along with « bâtonnage » (stirring up of the lees),
brings the smoothness and minerality of the Chardonnay to
the fore.
This Sauvignon Blanc is designated a Côtes de Gascogne
Protected Geographical Indication wine. Gascony is
characterized by its temperate oceanic climate and is this
aromatic grape variety’s preferred region as it enables it to
reach optimal maturity. Its terroir endows the ripe grapes
with lovely acidity reflected in the nice taut, fresh
character of the wines.
