Brandy Malva Pudding for Father’s Day

Surprise your dad this Father’s Day by treating him to a Brandy Malva Pudding. This recipe is easy to incorporate in an existing Malva pudding recipe that you may have.

You will need for the Pudding:

  • 2 Eggs
  • Pinch of Salt
  • 128g Castor Sugar
  • 5ml Smooth Apricot Jam
  • 170g of Cake Flour
  • 5ml of Bicarbonate of Soda
  • 125ml Milk
  • 5ml Vinegar
  • 30ml Butter

You will need for the sauce:

  • 125ml Milk
  • 125ml Butter
  • 125ml Sugar
  • 250ml Cream
  • 125ml Brandy

How to make:

  1. Preheat your oven to 190ºC.
  2. Beat your two eggs, castor sugar and jam until creamy.
  3. Combine all the dry ingredients into a separate bowl.
  4. Melt the butter in a small pot along with the milk and vinegar on a medium heat.
  5. Add together the creamy mixture with the dry ingredients and combine well.
  6. Pour mixture into a baking dish that holds 2 liters, place into the oven for 45mins until browned.
  7. In a pot on a medium heat, melt all the sauce ingredients.
  8. Once the cake is done, pour the sauce over the pudding and enjoy!
