A complex nose of black fruit combined harmoniously with notes of spice and light hints of smoke. On the palate it reveals an extraordinary silky and elegant texture, with firm tannins and remarkable acidity, unravelling into a long and fresh finish.
Complete destemming and crushing. Fermentation in stainless steel vats at a temperature of 26°C for approximately 13 days. Half of the lot matures in new French and Caucasian barrels of 225litres, and the other half in 2 year-old barrels of 225 litres.
Deep ruby colour with purple reflections. Intense aromas of ripe fruit, with hints of vanilla, spices and toasted wood. Balanced, dense, full, fleshy, with silky tannins and fruit flavours, long and burnished finish.
Cálem Tawny Port matures in oak casks. A vivid goldenbrown colour. A nose of honeyed fruit, with aromas of dried fruit and marked notes of wood. In the mouth, it is silky and velvety, intensely fruity and round. A wine with great balance and character.
Cálem Fine White Port matures in large oak barrels and stainless steel vats. Pale straw colour. On the nose, it is rich and perfumed, with abundant floral aromas and notes of tropical fruit. Smooth, full-bodied and firm on the palate, with a deliciously fruity finish.
Cálem Fine Ruby Port matures in oak barrels and stainless steel vats. A deep ruby colour, with a garnet rim. Vibrant nose, laden with young and fruity aromas. In the mouth, it is firm, smooth and balanced, revealing great freshness and vigour.
